Melibiose
 
[zu Melitose und lateinisch bi- »zwei« gebildet] die, -, ein Disaccharid, das aus je einem Molekül Galaktose und Glucose aufgebaut ist; bildet farblose, süß schmeckende, wasserlösliche Kristalle, reduziert Fehling-Lösung nicht und wird von Hefe nicht vergoren. Melibiose ist Bestandteil der Raffinose, aus der sie durch partielle Hydrolyse gewonnen wird.
